荷葉蒸石斑

過年一定要吃魚,代表年年有餘嘛,今次 Angel用了鮮荷葉去蒸,帶點荷葉香味。

材料:

石斑肉 1條、大頭菜 2片、乾荷葉 1塊、果皮 1小片、薑 3片、葱 2棵、紅椒 1隻(切絲)

調味料:

鹽/糖各 1/2茶匙、生粉 1茶匙、蛋白 1湯匙、胡椒粉/麻油各少許

做法:

1.石斑肉切片,加調味料拌勻醃 15分鐘。

2.果皮浸軟,刮去瓤後切絲。

3.將荷葉洗淨,用熱水灼燙後抹乾。

4.將薑、大頭菜及葱切絲,放入石斑肉拌勻。

5.在蒸籠鋪上錫紙,再鋪荷葉,排上石斑肉,鋪上果皮絲後包好荷葉,用竹籤穿好,放入鑊用大火隔水蒸 8至 10分鐘,剪開荷葉撒上紅椒絲作裝飾即可。
